Wine Pairing
Wine can be the perfect finishing touch to a fine meal, but many people often question what wines will properly pair with the flavor of certain dishes.

Feel free to experiment with favorite pairings of your own. The only rule to observe is that the wine and food must be balanced - neither should overpower the other.

Festival Mandarin Salad
5 to 6oz Mixed Greens
1 cup Diced, cooked,   Chicken Breast, cooled
1 cup Julienned,
  Festival Tart Apples
1 � 11 oz Can Festival   Mandarin Oranges,   drained
1/2 cup Sliced Toasted Almonds
1/2 cup Thinly Sliced Red Onions

1 teaspoon Balsamic Vinegar
1 tablespoon Red Wine Vinegar
1 tablespoon Rice Wine Vinegar
2 tablespoons Vegetable Oil
1/4 Cup Sugar
(substitute Splenda if desired)
Thoroughly mix all dressing ingredients until fully emulsified, set aside. In a large salad bowl, add mixed greens, chicken breast, Festival Tart Apples, toasted almonds and red onions. Toss gently with dressing. Garnish the top with the Festival Mandarin Oranges and ENJOY!
